125ml ... 1/2 cup butter
125ml ... 1/2 cup brown sugar firmly packed
250ml ... 1 cup flour
Cream butter, brown sugar and flour together. Press firmly into a buttered 20x30 (8x12) pan.
Bake just above center at 160°C (325°F) oven for 20 minutes.
*make sure it does not brown.
250ml ... 1 cup brown sugar firmly packed
30ml ..... 2 Tbsp flour
2ml ...... 1/2 tsp baking powder
1/2ml ... 1/8 tsp salt
2 .......... 2 eggs (beaten)
5ml ...... 1 tsp vanilla
250ml .. 1 cup shredded coconut (200g bag)
Stir together brown sugar, flour, baking powder and salt. Set aside.
Beat eggs and vanilla, stir in dry ingredients. Beat until light.
Spread over partially baked batter
Sprinkle with coconut.
Bake just above center in 160°C (325°F) oven for 25 minutes or until meringue is brown.
Cut into small bars while warm then let cool
